Henbit: A Guide to Identification, Harvesting, and Utilization

Amidst verdant landscapes across the globe, a humble yet versatile herbaceous plant known as Henbit (Lamium amplexicaule) emerges as a delightful botanical treasure. From its distinctive purple flowers to its nutrient-rich leaves, Henbit offers a bounty of benefits for foragers and herbalists alike.

Identification and Habitat: Henbit can be identified by its square stems, opposite leaves with rounded edges that clasp the stem, and small tubular purple flowers arranged in whorls. It thrives in moist, fertile soils and can often be found in fields, gardens, and disturbed areas across zones 4-9.

Harvesting: Harvesting Henbit is a simple process of gathering the tender young leaves and flowering tops, preferably before the plant goes to seed. Exercise caution to avoid harvesting from areas treated with pesticides or herbicides.

Look-Alike Plants: While identifying Henbit, it’s essential to distinguish it from similar-looking plants to avoid misidentification. One common look-alike is Purple Deadnettle (Lamium purpureum), which shares a similar growth habit and flower color. However, Henbit can be differentiated by its more rounded leaves and lack of distinctive purple markings on the foliage. Additionally, Ground Ivy (Glechoma hederacea) shares a similar growth habit but has more rounded leaves with scalloped edges. In our pastures, we’ve found Pink verbena (Glandularia pumila) popping at the same time, with similar leaves though more serrated, but distinctly different flowers.

Nutrient Profile: Henbit boasts a nutrient-rich profile, containing vitamins A, C, and K, as well as minerals such as calcium, magnesium, and potassium.

Contraindications: While generally safe for consumption, individuals with allergies to plants in the Lamiaceae family, such as mint or basil, should exercise caution when using Henbit medicinally. Additionally, pregnant or nursing women should consult with a healthcare professional before incorporating Henbit into their regimen.

Edible Parts and Culinary Ideas: Henbit offers culinary enthusiasts a delightful array of flavors and textures. The tender young leaves and flowering tops can be harvested and used fresh in salads, sandwiches, and pesto. For a refreshing spring tonic, try blending Henbit leaves into a vibrant green smoothie with fresh fruits and vegetables. Additionally, Henbit can be sautéed or stir-fried as a nutritious addition to savory dishes.

Henbit Pesto:

  • Ingredients:
    • 2 cups fresh Henbit leaves and flowering tops
    • 1/2 cup grated Parmesan cheese
    • 1/3 cup toasted pine nuts or walnuts
    • 2 cloves garlic, peeled
    • 1/2 cup extra-virgin olive oil
    • Salt and pepper to taste

  • Instructions:
    • In a food processor, combine Henbit leaves, Parmesan cheese, pine nuts or walnuts, and garlic cloves. Pulse until finely chopped.
    • With the food processor running, slowly drizzle in the olive oil until the mixture forms a smooth paste.
    • Season with salt and pepper to taste, adjusting as needed.
    • Serve Henbit pesto tossed with pasta, spread on crackers, or used as a topping for grilled vegetables.

Medicinal Parts and Remedies: In herbal medicine, Henbit is revered for its medicinal properties, particularly its ability to support respiratory health and soothe inflammation. The leaves and flowers can be dried and brewed into a fragrant herbal tea, which may help alleviate coughs, congestion, and seasonal allergies.

Henbit Respiratory Tea:

  • Ingredients:
    • 1 tablespoon dried Henbit leaves and flowers
    • 1 cup hot water
    • Optional: honey or lemon for flavor

  • Instructions:
    • Place dried Henbit leaves and flowers in a teapot or heatproof mug.
    • Pour hot water over the Henbit, covering completely.
    • Steep for 5-10 minutes, allowing the herbs to infuse into the water.
    • Strain the tea, discarding the Henbit leaves and flowers.
    • Add honey or lemon to taste, if desired.
